Time is the essence.

Nobody knows the agave plant quite like master distiller Enrique Fonseca. Before making his own tequila, he spent decades as an agave producer and harvester. When it came time to make his oldest expression, he selected a 1984 planting that was harvested in late 1993; blue agave usually needs 6 to 9 years to fully mature.

After harvest, the agave is cooked (hydrolyzed), the juice extracted and fermented to prepare for distillation. For Fuenteseca Reserva’s distillation, Enrique uses a combination of double-copper column stills and alembic pot stills, depending on the expression.

Once the distillation is complete, Enrique employs a variety of aging techniques. From different types of wood barrels to various elevations and climate conditions. All factors work together in the aged tequilas, to develop entirely unique flavors, aromas, profiles and colors.

The last step in the process also happens to be the most important: PATIENCE. What makes Fuenteseca Reserva so unique is not just how it’s aged, but for how long. Truly unprecedented for tequila, Enrique develops five to twenty-one year old Reservas that make Fuenteseca the longest and better aged tequila ever.
