DISTILLATION (Fall 1995)

• Initially Canadian white oak, previously used to age rye whiskey

CASKS

• 75% copper double-column still
• 25% copper alembic still
• Re-barreled after six years - 50% Canadian white oak rye whiskey casks, 50% European dark oak California red wine casks

AGING

• First six years in Canadian white oak at 4,600-foot elevation
• Blended, re-barreled, and moved to cooler, breezier climate to age an additional twelve years
